WHY DID I GO PLANT BASED?
Many years ago I was an equal opportunity omnivore. I worked in a boutique farm to table restaurant in San Francisco. I was in the industry for twenty years eating and learning my way through the world via food. My bachelors degree in Geology took me to several in country culinary adventures around the globe. I thought and felt like I ate a pretty healthy diet. Mediterranean in style most of my meals contained equal parts meat, grain and vegetables. I did not have any known major health issues. I felt and looked pretty good in all my clothes.
One Saturday night late in the evening a lovely young lady and her companions pulled up at my bar. After a thistly start said lovely lady and I bonded over single malt. Two weeks later we had our first date. Shortly after that she invited me over and cooked for me. Three plates later I was stuffed. Full without the food coma. It was not just the loss of the food coma but the actual vibrancy I felt after powering down plate after plate of plants. Vibrancy. I was hooked. The lovely young lady did not last. The light did.
I chose to slowly change the things I put into my body. It was a process. A positive attitude helped a lot. I don't miss cheeseburgers any more. It did not happen over night. The investment was worth it for my mind and my body.
